TRYPSIN is the answer..it works only in alkaline medium whereas in case of pepsin, it is active in acidic medium. pepsinogen is converted to active pepsin in the stomach due to the action HCl. Trysinogen is converted to active trysin only after reaching small intestine(duodenum) because mucus along with bicarbonates protect the stomach from acidic medium and gives an alkaline pH.
ALONG WITH TRYPSIN...carboxypeptidases, amylases, lipases, chymotrypsin, nucleases etc..work well in alkaline medium.
